Pineapple Smoke Salmon Dip
The sunny-citrus flavor of the pineapple complements the smoke salmon so well you’ll find excuses to serve this dip more often.
1 8-oz package cream cheese
1 pint (16 oz) sour cream
1 20-oz can crushed pineapple
2 cups smoked salmon
1/4 cup chopped chives
1 tsp horseradish
1 small can water chestnuts (adds crunch)
1/2 tsp Cajun-type seasoning
Drain the pineapple (save the juice for smoothies or muffins). Cream sour cream, cream cheese, water chestnuts, horseradish, and Cajun seasoning together in a food processor. Add the smoked salmon and pineapple. Pulse a few more times, but don’t over mix to a paste. Serving suggestions: crackers, chips, sliced radishes, celery and carrot sticks, and sliced apples. Great on toasted bagels and sandwiches.
